Turkey mince cottage pie in the slow cooker [DF, SF, GF]

We love a nice hearty dinner in our home. Preferably something where I can do the prep early in the day and then enjoy the fruits of my labour at the end of it. Working from home means the slow cooker can be used lots. This turkey mince cottage pie is a frugal, lower fat alternative to a slow cooker cottage pie and it is still packed with flavour.

Ingredients for turkey mince cottage pie:

300g Carrots (I use one small can of tinned carrots and chop finely)

200g Onions (I use frozen)

200g Celery or 1/2 teaspoon of celery salt

500g Turkey mince (I use 2%)

1 tablespoon of thyme

3 Garlic cloves

1 tablespoon of gluten-free brown Sauce

Gluten-free Worcestershire sauce – just a dash

300ml of gluten-free beef stock (reduced salt)

1/2 tablespoon of plain gluten-free flour (I use Doves Farm)

Mash topping:

800g potatoes

30g dairy-free spread (I use Vitalite)

Method for turkey mince cottage pie:

Brown your mince if you want.

Put everything in the slow cooker except for the stock and flour. Keep back the potatoes & dairy-free spread.

Combine the stock & flour and mix well.

Add to the slow cooker.

Cook it on high for 4 hours. Or 6-8 hours on low.

Prepare your mash topping.

Once the filling is ready you can top with mash and cook for a further 1-1.5 hours on high. Alternatively, place in an oven dish and top with mash and crisp under the grill.

Serve!
