Dairy free oat biscuits [DF, GF, SF]

When making dairy free items I’m always pleasantly surprised at how easy it is to convert basic baking items. For butter, we typically substitute with Vitalite (the sunflower one) and for milk, we use almond milk, which is our preferred dairy free alternative. These dairy free oat biscuits have been a favourite in our home for a couple of years now. They are simple to make, fairly cheap and you can freeze the dough or the leftovers too. The ingredients I have used are dairy free, soya free (soya lecithin may appear in the specific ingredients I used) and gluten free. Please ensure you always check the ingredients you are using, as ingredients may vary by brand. Scroll down near the end of this recipe for the recipe card to get started right away! Gluten-free jam drops (AD) [DF, SF, GF]

AD. My little daughter Daisy absolutely loves a sweet treat. As she spends 3 days a week at Nursery she is becoming used to the mindset of having something for ‘pudding’ after lunch AND dinner. As I want to encourage her to eat all sorts of foods I sometimes use a little sweet treat as an encouragement for her to eat all of her vegetables or her protein sources. I have made her gluten-free jam drops, using wonderful Santa Rosa jams, that I ordered from the Ciao Gusto Italian Deli at Ocado. Dairy and gluten free potato waffle [DF, GF, SF]

Cooking from scratch frequently means that we often have leftovers. I like to try and reduce food waste as much as I can so even the smallest scraps are saved in the fridge. Recently I had leftover mashed potato and decided to make a dairy and gluten free potato waffle for Daisy and me to enjoy. In true frugal fashion, we ate our waffle with other fridge leftovers, including some gluten free slow cooker sausage cassoulet. If you want to get straight to cooking then scroll down towards the end of this post for a recipe card.

Slow cooker gluten free sausage cassoulet [DF, GF, SF]

I love using my slow cooker as it is a real time saver. Being able to load it up in the morning, and then go about my day is so useful. Daisy loves helping me chuck the ingredients into the slow cooker and I always encourage her to join me. I find that this makes Daisy more interested in eating her dinner and that is a win for me! This slow cooker gluten free sausage cassoulet takes just minutes to prepare and has such a deep, rich flavour. Please ensure you always check the ingredients you are using, as ingredients may vary by brand. Scroll down near the end of this recipe for the recipe card to get started right away!
