Gluten free cornflake tart [DF, SF, GF]

I’m a big fan of money saving, particularly when it comes to regular household bills and expenses. One area where we spend quite a lot of money, food wise, is on snacks and treats for Daisy. With 4 small bakewell tarts costing £2.00 and 6 jam tarts costing £2.50 this really prompts me to make my own. It’s a little more time consuming but I know that Daisy loves my cooking and appreciates all the treats. Recently I made this gluten free cornflake tart and I’ve had quite a few messages asking me for the recipe – so here it is!

Turkey mince cottage pie in the slow cooker [DF, SF, GF]

We love a nice hearty dinner in our home. Preferably something where I can do the prep early in the day and then enjoy the fruits of my labour at the end of it. Working from home means the slow cooker can be used lots. This turkey mince cottage pie is a frugal, lower fat alternative to a slow cooker cottage pie and it is still packed with flavour.

Dairy and gluten free potato waffle [DF, GF, SF]

Cooking from scratch frequently means that we often have leftovers. I like to try and reduce food waste as much as I can so even the smallest scraps are saved in the fridge. Recently I had leftover mashed potato and decided to make a dairy and gluten free potato waffle for Daisy and me to enjoy. In true frugal fashion, we ate our waffle with other fridge leftovers, including some gluten free slow cooker sausage cassoulet. Gluten-free jam drops (AD) [DF, SF, GF]

AD. My little daughter Daisy absolutely loves a sweet treat. As she spends 3 days a week at Nursery she is becoming used to the mindset of having something for ‘pudding’ after lunch AND dinner. As I want to encourage her to eat all sorts of foods I sometimes use a little sweet treat as an encouragement for her to eat all of her vegetables or her protein sources. I have made her gluten-free jam drops, using wonderful Santa Rosa jams, that I ordered from the Ciao Gusto Italian Deli at Ocado.
