A lasagne is a bit of a classic dinner in our home. We eat it every few weeks and it is a great way to get lots of vegetables into little ones. Our daughter Daisy loves a lasagne and when I prepare this version I typically make it GF and DF. Sometimes I make ours using standard products that are not freefrom and then I make Daisy a couple of individual lasagnes. Today I want to share with you our slow cooker lasagne recipe. This recipe is gluten free but can easily be made dairy free and soya free using a few small changes.

Ingredients for slow cooker lasagne recipe:
For the mince filling:
1 tsp olive oil
500g mince (We used Quorn mince)
1 each of red & green peppers
2 medium onions
200g mushrooms
2 crushed garlic cloves
400g tin of chopped tomatoes
30g Tomato puree
2 tsp basil
1 tsp oregano
Seasoning (salt & pepper)
Freefrom white sauce (we used Tesco) You can also make this with milk, gluten free flour and melted butter. To make ours DF and GF we use Doves GF plain flour, Vitalite and almond milk.
Freefrom Lasagne sheets (we used Tesco)
50g Grated cheese
Method for slow cooker lasagne:
Chop up the onions, peppers and mushrooms.
Fry the vegetables and garlic in olive oil for a couple of minutes. Add the tomato puree, and chopped tomatoes next.
You can add the mince right away if you want to but we were using Quorn mince so I waited a few minutes.

Add the mince and fry for a couple more minutes. Add the basil, oregano, salt & pepper and stir well.

Layer up the lasagne. Mince, lasagne sheets and then white sauce.

Keep layering.

Once you’re near the top of the slow cooker pot, or at your desired level of layers (we like 3), then add the cheese to the top.

I place a clean tea towel under the lid. This helps to absorb the condensation and stops it making the top of the lasagne soggy. I’m at home when my slow cooker is on and I wouldn’t recommend leaving it unattended with a tea towel under the lid.

Cook on high for 3-4 hours or low for 6-7 hours to achieve this consistency. You CAN leave for longer but I never find the lasagne goes crispy as it does in the oven, so we just enjoy it once it is cooked.

Serve. If you want a crispy top then pop it under the grill for a few minutes.
