In our home, we love to do lots of baking. It is a great cheap way to have fun with little ones and also it is pretty easy to rectify mistakes when you’re rolling out pastry. Especially if you make something simple like jam tarts or cheese straws. This gluten-free shortcrust pastry is cheap, easy to make and can be kept in the fridge for a couple of days if you want to spread out the baking fun with little ones!

These pastry cases were made using this gluten free shortcrust pastry recipe – my 3 year old made these cases herself so I think that shows the pastry is fairly easy to work with!

Ingredients for gluten free shortcrust pastry

  • 200g gluten free flour
  • 100g freefrom butter (I used Vitalite)
  • 90ml water

Method for gluten free shortcrust pastry

Combine together the flour and butter using a fork or food processor. You’ll get a breadcrumb type consistency.

Start to slowly add water to the breadcrumb mixture to start to form the pastry together. I find that I typically use 60-75ml. Then the mixture is fairly wet but it dries up a little once chilling in the fridge.

Leave in the fridge for 1-2 hours before using.

Roll out and use as needed.

  3. Wrap in clingfilm and leave in the fridge for 1-2 hours before using.

  4. Roll out and use as needed.

Can you make gluten free shortcrust pastry without Xanthan Gum?

Yes! This recipe! It is SO simple. The texture is a little softer. I DO feel that Xanthan Gum can give an extra sturdiness to the pastry but this recipe works great for jam tarts and lots of nice bakes. Also, my daughter was FPIES to Xanthan Gum for 3.5 years of her life so we’ve got used to making recipes without it where possible!
