AD. My little daughter Daisy absolutely loves a sweet treat. As she spends 3 days a week at Nursery she is becoming used to the mindset of having something for ‘pudding’ after lunch AND dinner. As I want to encourage her to eat all sorts of foods I sometimes use a little sweet treat as an encouragement for her to eat all of her vegetables or her protein sources. I have made her gluten-free jam drops, using wonderful Santa Rosa jams, that I ordered from the Ciao Gusto Italian Deli at Ocado. Ingredients for gluten-free jam drops
70g caster sugar
5ml vanilla extract
150g butter (I used Vitalite)
140g plain flour (I used Doves gluten-free)
1/4 teaspoon of Xantham Gum
6 teaspoons of Santa Rosa apricot and strawberry selective conserve (adjust as required)

Method for gluten-free jam drops
Pre-heat your oven to gas mark 4 (180C).
Line baking trays with baking tray liners or grease your baking tray/line with baking paper.
Mix together the sugar, butter and vanilla extract. Combine until it is well whipped and fluffy.
Add the flour and mix together.
Place the mixture into small balls and place them on to your baking trays about 2-3 inches apart. Walnut-sized is fine. You can make your drops larger, as I have and then cut them down to a more uniform size and saved the crumbs for topping freefrom ice cream with!
Press the back of a spoon into each of the balls to press them down slightly.
Fill with jam, around 1/2 a teaspoon.
Bake for 11-15 minutes until lightly golden. Baking time depends on the size of drops that you bake. I find if you spread the mixture over 15 or so they will bake in 11 minutes. If you spread the mixture over 9 drops they will take 15 minutes.
Leave on the trays for 10 minutes before transferring to a wire cooling rack.

As you can see these are simple, fairly frugal and my little girl loves them! They keep for a few days, at least, in an airtight jar. We are going to start making these regularly to replace the jam tarts that we often buy that cost £2 for just 4!

These look incredibly delicious! We’ve just found out my son seems to get affected if I eat dairy or gluten at the moment (I’m breastfeeding him) and I have really been missing sweet treats. I love that these are gluten free! I really want to make these!
