I’m a big fan of money saving, particularly when it comes to regular household bills and expenses. One area where we spend quite a lot of money, food wise, is on snacks and treats for Daisy. With 4 small bakewell tarts costing £2.00 and 6 jam tarts costing £2.50 this really prompts me to make my own. It’s a little more time consuming but I know that Daisy loves my cooking and appreciates all the treats. Recently I made this gluten free cornflake tart and I’ve had quite a few messages asking me for the recipe – so here it is!

Ingredients for gluten free cornflake tart
Shortcrust pastry – I adapted this shortcrust pastry recipe using gluten-free flour, 1 tablespoon of sugar and 1/2 tsp Xanthan Gum. I also really rate the freefrom pastry mix from Tesco.
Filling
125g jam (of your choice)
110g golden syrup
50g butter (I used Vitalite)
30g brown sugar
125g cornflakes
Method for gluten free cornflake tart
Prepare your pastry. Line the *fluted tin and then bake on gas mark 5 for about 15 minutes. I use baking beans and line the pastry, but you can bake without them. You want to remove the pastry when it is just lightly browning.
Melt together the golden syrup, butter and brown sugar. Once melted pour in the cornflakes and slowly stir through until well coated.
Pour this mix into the pastry case and return to the oven for 6-8 minutes until the mixture is firm.
Serve and enjoy!

- 125 g cornflakes
