When making dairy free items I’m always pleasantly surprised at how easy it is to convert basic baking items. For butter, we typically substitute with Vitalite (the sunflower one) and for milk, we use almond milk, which is our preferred dairy free alternative. These dairy free oat biscuits have been a favourite in our home for a couple of years now. They are simple to make, fairly cheap and you can freeze the dough or the leftovers too. The ingredients I have used are dairy free, soya free (soya lecithin may appear in the specific ingredients I used) and gluten free. Ingredients for dairy free oat biscuits
120g dairy free butter (I used Vitalite sunflower)
75g brown sugar
30ml golden syrup
100g gluten free porridge oats
100g gluten free plain flour
1/4 tsp Xanthan Gum
1/2 tsp gluten free baking powder
Method for dairy free oat biscuits
Preheat your oven to gas mark 5 (190C)
Cream together the butter and sugar.
Add golden syrup and combine.
Mix together the dry ingredients. Sieve the flour.
Add the wet and dry ingredients together.
Roll into walnut-sized balls.
Place onto a lined baking tray.
Press down lightly with a fork.
Bake for 11-12 minutes.
You want them to be slightly firm and lightly brown, as they will harden slightly on the cooling rack.
Leave on the baking tray for a few minutes before transferring to a cooling rack.

My daughter Daisy really enjoys these dairy free oat biscuits. I love that they are simple to make and can be customised too. You can even drizzle over some dairy free chocolate if you want to decorate them.
