Dairy and gluten free potato waffle [DF, GF, SF]

Cooking from scratch frequently means that we often have leftovers. I like to try and reduce food waste as much as I can so even the smallest scraps are saved in the fridge. Recently I had leftover mashed potato and decided to make a dairy and gluten free potato waffle for Daisy and me to enjoy. In true frugal fashion, we ate our waffle with other fridge leftovers, including some gluten free slow cooker sausage cassoulet. Ingredients for dairy and gluten free potato waffle

300g leftover mashed potatoes

30g plain flour (I used Doves gluten-free)

1 medium egg

Salt & pepper

Additional seasoning (optional – I used a little BBQ seasoning from Aldi)

Spray oil

Method for dairy and gluten free potato waffle

Measure out the ingredients.

Combine together the leftover mashed potatoes, plain flour, medium egg, salt & pepper and additional seasoning (optional).

Mix for the dairy and gluten free potato waffle

Grease the waffle maker with your spray oil.

Add your mixture and cook for around 3-5 minutes. Depending on your waffle maker size you may have enough ingredients for two waffles. We don’t as I always overfill the waffle maker!

Serve. Add toppings of your choice.
