Dairy and gluten free pancakes [DF, SF, GF]

I love whipping up dishes for Daisy that are similar to the ones that we eat. Making dairy and gluten free pancakes is really simple, they taste pretty similar to ones with dairy and gluten and are just as simple to make. I love a recipe that is quick, easy AND frugal. Well, as frugal as dairy and gluten free recipes can be. Ingredients for dairy and gluten free pancakes

1 medium egg (approximately 50g)

50g plain flour (I used Doves gluten-free – match the weight to the weight of the egg)

70ml almond milk – this makes a thinner pancake mix, you can use less milk if you like a thicker pancake

Pinch of salt

Spray oil

Your choice of toppings – we love Nature’s Store hazelnut & cocoa spread

Method for dairy and gluten free pancakes

Measure out the egg, plain flour & almond milk.

Whisk together.

Heat up your pancake maker and add spray oil.

I like to heat the pancake maker up to high and then turn down to a medium heat for cooking the pancakes on.

Ladle on the batter. I always find it shrinks back a little, which gives just enough room for flipping the pancakes. I use either a wooden spatula or a palette knife. Heat for 1-2 minutes on either side. This won’t go a deep gold colour like most pancakes, as there is no butter.

Serve and apply your favourite toppings. Daisy loves this Nature’s store hazelnut & cocoa spread.
